Vada Pav is a popular street food snack that originated in Mumbai, India. Ingredients:
- 4 large potatoes, boiled and mashed
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 1 tablespoon chopped coriander leaves
- 8-10 garlic cloves
- 2-3 green chilies
- 1 cup chickpea flour (besan)
- 1/4 cup water
- Oil for deep frying
- 8 pav (bread rolls)
- Garlic chutney or mint chutney
- Tamarind chutney
Instructions:
- In a pan, heat oil and add mustard seeds, cumin seeds, turmeric powder, and red chili powder. Let them splutter.
- Add mashed potatoes and salt. Mix well and cook for 2-3 minutes.
- Add chopped coriander leaves and mix well. Set aside to cool.
- In a blender, grind garlic cloves and green chilies to a fine paste.
- In a mixing bowl, combine chickpea flour, garlic-chili paste, salt, and water. Mix well to form a smooth batter.
- Heat oil in a deep frying pan.
- Take a small portion of the potato mixture and shape it into a ball. Flatten it slightly to form a patty.
- Dip the patty in the chickpea flour batter and coat it evenly.
- Deep fry the coated potato patty until golden brown and crispy. Remove from oil and drain excess oil on a kitchen towel.
- Cut the Pav bread rolls in half and apply garlic chutney or mint chutney to the inner side of both halves.
- Place the fried potato patty between the Pav halves.
- Serve hot with tamarind chutney and enjoy your delicious Vada Pav!
