Ingredients:
- 8 slices of whole wheat bread
- 1 medium-sized cucumber, thinly sliced
- 1 medium-sized tomato, thinly sliced
- 1 medium-sized red onion, thinly sliced
- 1 medium-sized bell pepper (capsicum), thinly sliced
- 1 cup shredded lettuce
- 1/2 cup grated carrot
- 4-6 tablespoons mayonnaise
- 2 tablespoons green chutney (coriander-mint chutney)
- Salt and black pepper to taste
- Butter or olive oil for toasting
Instructions:
- Start by preparing the vegetable fillings. In a mixing bowl, combine the shredded lettuce and grated carrot. Toss them together and set aside.
- Take the cucumber, tomato, red onion, and bell pepper slices, and season them with a pinch of salt and black pepper. Gently toss them to evenly coat the slices. Set aside.
- Next, it’s time to assemble the sandwich. Take a slice of bread and spread a layer of mayonnaise on one side. On the other slice, spread a layer of green chutney.
- Place a few slices of seasoned cucumber, tomato, red onion, and bell pepper on one of the bread slices with mayonnaise. Sprinkle a little salt and pepper over the vegetables for added flavor.
- Add a generous amount of the lettuce and grated carrot mixture on top of the vegetables. Press down gently to ensure all the layers stick together.
- Cover the sandwich with the other slice of bread, spread with green chutney. Press the sandwich together gently.
- Repeat the process with the remaining bread slices and fillings to make more sandwiches.
- Heat a non-stick pan or griddle over medium heat. Spread some butter or olive oil on the pan.
- Place the prepared sandwich on the pan and cook for 2-3 minutes on each side until the bread turns golden brown and crispy.
- Remove the sandwich from the pan and let it cool for a minute. Slice it diagonally into two halves or leave it as a whole sandwich, as per your preference.
- Serve the Veg Sandwich hot with a side of tomato ketchup or your favorite dip.
