Veg Sandwich – Light and Healthy Recipe

Today, we bring you our mouthwatering Veg Sandwich recipe that combines fresh vegetables, delightful spreads, and artisan bread to create a satisfying and wholesome meal. Ingredients:

  • 8 slices of whole wheat bread
  • 1 medium-sized cucumber, thinly sliced
  • 1 medium-sized tomato, thinly sliced
  • 1 medium-sized red onion, thinly sliced
  • 1 medium-sized bell pepper (capsicum), thinly sliced
  • 1 cup shredded lettuce
  • 1/2 cup grated carrot
  • 4-6 tablespoons mayonnaise
  • 2 tablespoons green chutney (coriander-mint chutney)
  • Salt and black pepper to taste
  • Butter or olive oil for toasting

Instructions:

  1. Start by preparing the vegetable fillings. In a mixing bowl, combine the shredded lettuce and grated carrot. Toss them together and set aside.
  2. Take the cucumber, tomato, red onion, and bell pepper slices, and season them with a pinch of salt and black pepper. Gently toss them to evenly coat the slices. Set aside.
  3. Next, it’s time to assemble the sandwich. Take a slice of bread and spread a layer of mayonnaise on one side. On the other slice, spread a layer of green chutney.
  4. Place a few slices of seasoned cucumber, tomato, red onion, and bell pepper on one of the bread slices with mayonnaise. Sprinkle a little salt and pepper over the vegetables for added flavor.
  5. Add a generous amount of the lettuce and grated carrot mixture on top of the vegetables. Press down gently to ensure all the layers stick together.
  6. Cover the sandwich with the other slice of bread, spread with green chutney. Press the sandwich together gently.
  7. Repeat the process with the remaining bread slices and fillings to make more sandwiches.
  8. Heat a non-stick pan or griddle over medium heat. Spread some butter or olive oil on the pan.
  9. Place the prepared sandwich on the pan and cook for 2-3 minutes on each side until the bread turns golden brown and crispy.
  10. Remove the sandwich from the pan and let it cool for a minute. Slice it diagonally into two halves or leave it as a whole sandwich, as per your preference.
  11. Serve the Veg Sandwich hot with a side of tomato ketchup or your favorite dip.
